Federico: Merida is filled with great live music! Most of it is free, on various nights in different public spaces around the city. The full schedule is in the guidebook, but my favorite is Thursdays, for trova at Parque Santa Lucia (on C/ 61 a few blocks north of the main plaza).
Also check out the Merida events calendar at http://www.yucatanliving.com–they publish it every week. This might tip you off to some new bars with music–I haven’t had a chance to research new stuff since last fall.
